Quinoa peach pilaf

  • Quinoa, uncooked, ¾ cup(s)
  • Extra virgin olive oil, 1 tbsp(s)
  • Onion, 1 cup(s), chopped
  • Peach, 2 medium (2-2/3" dia), pitted and diced (or any seasonal fruit of your choice)
  • Garlic powder, 1 tsp(s), or granulated garlic
  • Green onion, 4 medium, diced, use the bulb and green top
  • Feta cheese, reduced-fat, crumbled, 4 tbsp(s)
  • Balsamic glaze, 4 tbsp(s)

Method

Cook the quinoa according to package instructions.

Preheat a nonstick sauté pan to medium heat, add olive oil. Cook the onions, stir frequently until well caramelized, being careful not to burn.

Once onions are caramelized, add the cooked quinoa, peaches, garlic powder, green onion and feta cheese to the pan. Stir to combine. Season to taste.

Divide evenly between four serving bowls. Drizzle each serving with 1 tablespoon of balsamic glaze to add a little tang and sweetness.
