Cheesy mushroom eggs on toast

  • Mushrooms, raw, 0.5 cup(s), pieces (1.2oz)
  • Eggs, 2 large, raw (3.5oz)
  • Black pepper, 1 dash(es), ground
  • Avocado, 4 tbsp(s), diced (2.1oz)
  • Cheddar cheese, reduced-fat, shredded, 3 tbsp(s) (0.7oz)
  • Whole-grain bread, 1 slice(s) (1.1oz)
  • Fruit, any type, 1 small piece(s) (3.5oz)

Method

Heat a non-stick pan over medium heat. Add mushrooms and cook until soft. Remove from pan and set aside.

Lightly whisk eggs and season with black pepper. Pour egg into non-stick pan over medium heat and scramble until cooked through but light and fluffy.

Add mushrooms back into pan, along with avocado and cheese. Stir to combine.

Toast bread. Place cheesy scrambled egg on toast and season to taste. 

Follow with a piece of fruit.
