Tomato bruschetta

The tomato mixture in bruschetta also works great as a topping on pasta dishes or with seared chicken breasts and fish.

  • Plum (Roma) tomato, 6 plum tomato(es), seeded and diced
  • Basil, fresh, 2 tbsp(s), chopped
  • Garlic, minced, 1 tbsp(s)
  • Extra virgin olive oil, 1 tsp(s)
  • Salt, ¼ tsp(s)
  • Black pepper, 1 dash(es)
  • Whole-wheat baguette, 4 small slice(s) (2" x 2-1/2" x 1-3/4")

Method

In a small bowl, combine all of the ingredients, except for the baguette slices. Set aside for 1 hour.

Place the baguette slices in an oven or toaster oven and toast until slightly golden. To serve, top the baguette slices with the tomato mixture.
