A fruity and delicious parfait to appease your sweet tooth, while keeping to your daily Sweets allowance.
Preheat the oven to 400°F. Line a small baking tray with baking paper.
Spread the muesli onto the paper. Spoon over the combined maple syrup and vanilla. Stir to coat. Bake 10 minutes or until muesli is toasted and golden. Set aside to cool.
Spoon the ice cream into a bowl and allow to soften slightly. Swirl through the yogurt.
Spoon half of the muesli mixture over the base of a bowl. Top with the ice cream mixture, peaches, passionfruit and remaining muesli mixture. Serve.
