Berry baked oats

  • Olive oil spray, 2 x two-second spray(s)
  • Old fashioned (rolled) oats, 1 cup(s)
  • Banana, 2 small
  • 1% milk, ½ cup(s)
  • Peanut butter, reduced sugar & salt, 1½ tbsp(s)
  • Vanilla extract, 1 tsp(s)
  • Baking powder, 1 tsp(s)
  • Frozen blueberries, 1 cup(s)

Method

Preheat oven to 400°F. Spray an ovenproof baking dish (8-inch x 8-inch).

Add oats, banana, milk, peanut butter, vanilla and baking powder to a blender and blend until smooth. Pour into an ovenproof dish and add the blueberries evenly over the top.

Place on a baking sheet and bake for 20 to 25 minutes.

Remove from the oven and cut into four equal servings.
