Chicken souvlaki

  • Garlic, minced, 1 tsp(s) (0.1oz)
  • Lemon, 0.5 medium, juiced (1.5oz)
  • Oregano, dried, 0.25 tsp(s), ground
  • Black pepper, 1 dash(es)
  • Extra virgin olive oil, 2 tsp(s) (0.3oz)
  • Chicken breast, raw, 3 oz(s), cut into ¾-inch cubes (3oz)
  • Cherry tomatoes, 6 cherry tomato(es) (3.6oz)
  • Zucchini, 0.5 medium, sliced (3.5oz)
  • Iceberg lettuce, 1 cup(s), chopped (2oz)
  • Carrot, shredded, 0.25 cup(s) (1oz)
  • Red bell pepper, raw, 0.25 medium, sliced (1oz)

Method

To make the marinade for the chicken souvlaki, combine ½ teaspoon garlic, the juice of ¼ lemon, the oregano, pepper and 1 teaspoon of the olive oil in a bowl. Add chicken and toss to coat.

Preheat a grill plate or barbecue grill to high.

Place cherry tomatoes, zucchini and ½ teaspoon garlic on a piece of foil. Drizzle with remaining 1 teaspoon of olive oil and season to taste. Fold the foil to form a pouch.

Thread chicken pieces onto skewers. Place on the grill or barbecue, along with the foil pouch for 8 minutes, turning the chicken after 2 minutes on each side and shaking the pouch.

Meanwhile, make a salad by combining lettuce with carrot and bell pepper. Squeeze over remaining lemon juice and season.

Serve cooked chicken souvlaki skewers alongside grilled vegetables and salad.
