A balanced meal, all in one bowl. Salmon is a great source of protein and omega-3 fatty acids.

  • Part-skim ricotta cheese, 3 oz(s)
  • Olive oil spray, 3 x two-second spray(s)
  • Dried mixed herbs, 1 tsp(s)
  • Thyme, fresh, 3 sprig(s)
  • Atlantic salmon, farmed, 3 oz(s)
  • Cherry tomatoes, 4½ oz(s)
  • Black pepper, 1 dash(es), to season
  • Baby spinach, 1 cup(s)
  • Whole-grain bread, 1 slice(s), toasted, cut into fingers
  • Lemon, 1 medium, cut into wedges

Method

Preheat the oven to 425°F. Place the ricotta into a small roasting pan, lined with parchment paper. Spray the top with oil and sprinkle with mixed herbs and thyme. Bake for 15 minutes until the edges are light golden.

Meanwhile, place the salmon and tomatoes onto a lined baking sheet. Spray with oil and season.

When the ricotta has 8 minutes to go, place the salmon and tomatoes into the oven next to the ricotta and cook 8 minutes or until salmon is cooked to your liking.

Place the ricotta, salmon, tomatoes, spinach and toast into a bowl. Serve with lemon.
