This mocktail brings elegance to any celebration, especially New Year's. But be sure to measure the lavender carefully. It has a very strong flavor so you only need a small amount.
Method
In a medium sauce pot, bring 2 cups of water to a boil. Add 4 cups of ice to a 1 gallon pitcher and set aside.
Once water comes to a boil, add the blueberries, sugar and lavender. Let boil for about 5 minutes until the blueberries have popped and all of the sugar is dissolved. Strain the blueberry mixture over the pitcher of ice and discard what is left in the strainer.
Add lemon juice and Splenda. Fill the pitcher to the top with 1 gallon of cold water. Mix well.
