Bacon & avocado chopped salad

  • Canadian bacon, 5 slice(s) (2.4oz)
  • Instant brown rice, cooked, 1 x 4.4 oz cup(s) (4.4oz)
  • Chopped salad kit, Southwest, with dressing & toppings, 1 cup(s) (2.4oz)
  • Avocado, 1 tbsp(s) (0.5oz)

Method

Heat a large non-stick skillet over medium heat. Add the bacon. Turn the bacon once it starts to curl, continue flipping so that it browns evenly on both sides. Chop bacon into small pieces.

Prepare rice according to packet instructions.

Place chopped Southwest salad into a serving bowl. Stir through rice. Top with bacon bits and avocado.
