Orange jicama slaw

Jicama is a round root bulb that has kind of a potato- and pear-like texture with a slightly sweet earthy flavor. This is a great slaw and a tasty way to enjoy this vegetable native to Mexico.

  • Shallots, 2 tbsp(s) chopped
  • Orange, 1 cup(s), segments
  • Rice vinegar, ¾ cup(s)
  • Mirin, ¼ cup(s), (rice wine)
  • Sugar, 2 tbsp(s)
  • Jicama, 3½ cup(s), shredded
  • Carrots, 1¼ cup(s), grated
  • Red onion, ¼ cup(s), sliced

Method

Combine all ingredients in a medium bowl. Let sit and marinate 1 to 2 hours before serving.
