Breakfast potatoes

Sprinkle the potatoes with paprika before roasting them in the oven to add more color. These breakfast potatoes are a great side with any lean source of protein.

  • Olive oil spray, 1 x two-second spray(s)
  • Russet potato, 3 large
  • Extra virgin olive oil, 3½ tsp(s), divided
  • Onion powder, 1 tsp(s)
  • Garlic powder, 1 tsp(s)
  • Salt, 1 tsp(s)
  • Black pepper, ½ tsp(s), ground
  • Onion, 1½ medium, finely chopped
  • Red bell pepper, raw, ⅓ cup(s), chopped
  • Green bell pepper, raw, ⅓ cup, chopped

Method

Preheat oven to 400°F. Lightly coat a baking sheet with cooking spray. Cut each potato into 1-inch chunks.

In a medium bowl, combine 1 tablespoon oil, onion powder, garlic powder, salt and pepper. Place the potatoes in the bowl and evenly coat them with the seasoning mix. Place the potatoes on the prepared baking sheet. Roast in the oven for 20-30 minutes. Every 10 minutes, use a spatula to turn the potatoes to evenly brown them.

Add remaining ½ teaspoon oil to a sauté pan and heat to medium high. Sauté the onions and peppers for approximately 5-7 minutes or until tender. Set the pan aside and cover to keep warm.

When the potatoes are done, toss with the onions and peppers and serve.
