Method
Preheat oven to 375°F. Spear sweet potatoes with a knife and bake until soft, approximately 45 minutes.
Cook the quinoa. Allow quinoa and sweet potatoes time to cool. Remove skin and mash the sweet potatoes.
In a large bowl, combine sweet potatoes, quinoa, eggs, garlic, Parmesan cheese, parsley, salt, pepper and nutmeg. Take amounts equaling approximately ¼ cup and form into patties.
Preheat a large sauté pan to medium-high heat and add 1 tablespoon olive oil. Sear quinoa cakes in pan until golden brown on both sides.
Transfer the quinoa cakes to a lined baking sheet and bake in the oven for 5 minutes to ensure they're heated through.
TIP: This recipe should make 14 x ¼ cup patties and if serving as a main meal, two quinoa cakes is equal to one serving.
