Method
Preheat oven to 425°F. Line a baking sheet with parchment paper.
Pat the artichokes with paper towel to remove any excess water. Place the artichokes on the baking sheet and drizzle over the olive oil. Season with pepper. Roast for 15 to 18 minutes, giving them a toss halfway through.
Meanwhile, cook the pasta according to packet instructions.
Divide the pasta, roasted artichoke hearts and tuna between two serving bowls, stir to combine. Squeeze over lemon juice and sprinkle with Parmesan cheese. Gently toss and enjoy!
TIP: Toss through a few fresh basil leaves if you have some available.
